Definition

Collating is the act of combining information (usually pieces of paper or smaller documents) in the correct order.

Usage

In the world of fax, a collate function on a fax machine (or MFP with print/copy/scan/fax) means that multiple documents can be printed off and they will print together.

Collating can happen manually as well – by printing all the pages out and assembling them.
